sweet 'n savory shredded chicken

makes 4 servings

ingredients

4 oz shredded chicken (either "Just Chicken" from Sprouts, or shred your own)

1/2 cup Greek Yogurt, Fage 2%

1-2 tbsp Dijon mustard

1/2 cup red grapes, diced in half or quarters

1 stalk celery, diced up [NOTE: can swap this with cucumber]

1/2 tsp sea salt

1/4 tsp black ground pepper

 

directions

  1. Chop the celery and grapes up into diced pieces.
  2. Combine all Ingredients in a bowl.
  3. throw on salad greens, a wrap/tortilla, baked potato, or bread and you’ve got a quick easy balanced meal.
  4. store in air tight container. makes 4 servings
