lox bagel bowl

I am an absolute sucker for anything lox...so I've taken a stab at the viral lox bagel salad! I added some additional nutrients to the base to make it more hearty and carbohydrate dense.

ingredients

  • 1/4 cup edamame
  • 1/4 cup white microwave rice
  • 1-2 cups mixed greens

directions

  1. Slice cucumber very thinly with slicer OR by hand with sharp knife.
  2. Dice up onion into very tiny cubes.
  3. Slice lox salmon into very small pieces as well.
  4. In a large mason jar (or bowl). Combine ALL ingredients listed above. Give the jar a solid few shakes OR toss everything in the bowl until everything appears to be coated.
  5. Serve over a bed of edamame, rice, mixed greens!
