INGREDIENTS
- 1/4 - 1/3 cup oat flour
- 1 egg
- 1/2 medium zucchini, shredded
- 1 cup green cabbage, boiled until soft
- Salt, pepper, garlic powder, parsley (1 tbsp), 1 tbsp nutritional yeast
RECIPE
- finely chop cabbage into 1/4 inch long shreds.
- toss into a pot with ~6 cups of water. bring to a boil for 3 minutes (until cabbage is soft).
- while this is boiling, shred the zucchini, then dry the shredded zucc with a towel.
- once cabbage is softened, strain and place in a large bowl. add all remaining ingredients.
- roll into balls, then press flat
- on medium heat, drizzle 1 tsp olive oil on large pan, sear each flattened cabbage ball until golden brown
- Bake 400 degree for 27 minutes!
These taste incredible with my homemade beet dip or homemade tzatziki! You can even use them as buns for your sandwiches or burgers.
