Ingredients
FOR BOTTOM LAYER
- 1 tbsp golden turmeric mix (ie: turmeric+cinnamon+ginger)
- 2 tbsp protein powder, I use whey*
- 1/3 cup ground almonds**
- 2 tbsp crunchy peanut butter
- 1 tbsp honey OR maple syrup***
- 1-2 tbsp choice milk (really just enough to bind everything together!)
FOR TOP LAYER
- 2-3 tbsp dark cocoa chips, I love Lakanto
- 1/2 tsp of coconut oil
Directions
- Combine all dry ingredients in a big bowl. Stir.
- Combine PB & agave/honey/maple syrup into a smaller bowl. (See notes if using honey, you need to microwave)
- Pour PB/honey mixture into dry ingredients. Using your (ideally gloved?) hands or a fork, press every thing to get her until you get a big and delicious protein dough. Add milk as need.
- In a separate bowl, melt the coconut oil & chocolate chips in microwave in 15 second increments, stirring at each interval until blended & smoooooooth.
- Press small balls of dough into a the mini muffin tins (ideally silicone one!), a (baking paper-lined) tray. Next, drizzle chocolate mixture on top.****
- Stick it in the fridge for 60-90 minutes.
corresponding notes
* can you sub for 2 tbsp coconut flour OR 3 tbs more almond flour
** can use almond flour too, but I like the little chunks of almonds that come from pulsing whole almonds in a blender!
*** you want to make sure it’s a less-viscous consistency, so if you opted to use honey, I recommend microwaving the honey & PB together for 10-20 seconds to get it more liquid)
****if you don’t have mini muffin tins OR silicone muffin tin, feel free to use a mini loaf / cake tin, and pat the mixture down firmly into the bottom. Drizzle chocolate evenly on top.
This recipe is loaded with FATS and ANTI-INFLAMMATORY ingredients.
Why do we need fats? Well, fats are not only key is hormone production via the endocrine system, but also in organ and brain function, as your brain is made up of 60% fat! Nutrient-dense fats are in foods like nuts, nut butters, and oils.
Why do we need anti-inflammatories? Your immune system relentlessly seeks out and destroys cells in your body that do not belong there (i.e.: bacteria, virsuses, etc.). The immune system leverages many tactics to joust with these invadors - one of which is "inflammation"! While inflammation is an incredible strategy to squeeze invaders out, it can sometimes be taken too far...and when it is, pain / swelling and general adverse affects can occur. Eating anti-inflammatory foods, like turmeric, can help soothe those areas of cocern.
