main base ingredients
- 1 large sweet potatoes washed and dried
- 1/2 tbsp olive oil
Peanut butter + banana sweet potato toast:
- 1 tbsp peanut butter
- ½ banana
- Drizzle of honey
Hard boiled egg and avocado sweet potato toast:
- ½ avocado mashed
- 1 hard boiled egg
- Flakey sea salt
Feta egg and spinach sweet potato toast:
- 1 cup spinach sauteed
- 1 fried egg with salt and black pepper
- 1 tbsp feta cheese
Yogurt and berries sweet potato toast:
- ¼ cup plain or vanilla Greek yogurt
- ¼ cup berries of choice
- 1 tbsp sliced almonds
- 1 tbsp seeds of choice hemp, chia, flax, granola
directions
- Preheat the oven to 400F and line a large baking tray with parchment paper.
- Stab sweet potato a 8-10 times. Wrap it in a paper towel. Microwave for 3 minutes.
- Use a sharp knife or mandolin to slice off the ends of the sweet potatoes and discard. Then, the sweet potato lengthwise (long ways) down the middle. Carefully make about 3-4 slices about ¼” thick.
- Line a baking sheet with parchment paper, then drop your slices on it (ensure they're not overlapping). Drizzle a teeny tiny bit of oil on each slice.
- Bake for 15-20 minutes, until they are able to be pierced with a fork but are not too soft!
- Allow to cool. If you want them even more crispy, you can toast them up OR toss them on "broil" in the oven for an extra 3-5 minutes.
- Top with your desired toppings!
