cauliflower
head of organic cauliflower, separated into florets
1 tbsp extra virgin olive oil (or olive oil spray)
Kosher or Celtic salt + ground pepper, to taste
air fryer (you can totally make this in standard oven! just preheat to 450 and roast for 22-24 minutes)
sauce
1 tbsp extra virgin olive oil
2 tablespoons rice wine vinegar
2 tbsp (~handful) DRY ROASTED peanuts OR walnuts, coarsely chopped
1 tsp organic garlic, minced
2 tbsp Tamari or Organic soy sauce
1 tbsp chili paste
+/-2 stems cilantro, chopped
optional: 1 tbsp sesame seeds

Insert crisper basket in unit and close hood. Select AIR CRISP, set temperature to 390°F, and set time to 20 minutes. Select START/STOP to begin preheating.
Meanwhile, combine cauliflower, olive oil, salt, and pepper in a large mixing bowl, tossing well to evenly distribute the oil and seasonings.
When the unit beeps to signify it has preheated, place cauliflower in the basket. Close hood and cook for 5 mins.
Open lid, stir cauliflower spatula. Close hood and proceed to cook for 5-7 more minutes, until golden brown / crisssssspay!
While that's cookin', stir together all sauce ingredients in a large mixing bowl. after cauliflower is donezo, toss cauliflower evenly in the sauce!
