- 16 oz Good Cultured or Nancy's lowfat cottage cheese

- 2 tsp vanilla extract (should be pure - no added flavors)
- optional: maple syrup or honey
- Mix Ins: chocolate chips, coconut shreds, nuts, granola, cacao nibs, pumpkin seeds, sacha inchi seeds, dried fruits, etc.

- dump the cottage cheese, protein powder, coconut flour, and vanilla extract into a large bowl (and optional honey / syrup).
- using a hand mixer OR immersion blender, mix ingredients well until a batter-esque, very viscous substance forms.
- next, toss your choice mix-ins into the bowl, and gently fold 'em in.

how to eat
I usually take 3-4 spoonfuls, drop it into a small bowl, and top with everything under the sun. I love a solid CRUNCH, the granola, seeds, and sacha inchi seeds have been perfect.
