INGREDIENTS
- 3 medium zucchinis
- 2 medium squash
- 1-2 beets (depending on how "beety" you want the flavor)
- 2 tbs of tahini
- 1-2 garlic cloves, whole
- 1 tsp paprika
- salt & pepper to taste
- for spice: either jalapeño and/or Zhoug (Spicy Cilantro Sauce, can purchase at TJ's)
DIRECTIONS
- preheat oven to 475. line a baking sheet with silicone baking sheet, or parchment paper.
- slice up all of the veggies (zucchini, squash, beets) on the baking sheet, unseasoned. (NOTE: the soul purpose of roasting the veggies is to dry them out! they'll be blended up later ;) )
- roast them all at 475 for 25 minutes.
- remove from oven and let cool. drop the cooled veggies into a food processor or a blender.
- drop the remaining ingredients into the blender.
- continue blending until you reach a hummus-esque consistency.
Why do I love beets and beet root extract? Beets contain Nitric Oxide (NO); NO tells our blood vessels to expand, which allows the blood the flow more rapidly and larger quanities through the vessels. When the blood flow increases like this, it lowers the blood pressure (since the blood isn't condensed as much and causing the arteries to burst at the seems!)
