ingredients (makes about 4 servings)
- 1 package fully cooked chicken sausage (Amylu and Force of Nature are my go-tos)
- 2 tbsp Katie's Protein Pesto
- 1 bag frozen cauliflower gnocchi (GREEN GIANT are my go-to's)
- 1 lemon, juiced
directions
- Chop sausage into coins. In a sprayed skillet over medium heat add sausage and frozen gnocchi. Cook for 5 min or so. You may need to cover the skillet to cook gnocchi in the middle.
- Once browned, add pesto and lemon juice. Heat 3-4 more minutes and serve over a bed of salad greens. I usually spray my greens with olive or avocado oil, salt, pepper, & lemon juice.
- Notes: Adding lemon juice to any leafy green will add the perfect tanginess! If not a sausage fan, use a rotisserie chicken.
