ingredients (makes about 5 servings; 1 servings = ~2 cups)
- 1 box pasta, Goodles brand
- 1/2 cup unsw almond, cashew or coconut milk, Elmhurst or Malk brand
- 8 oz low-fat cottage cheese, Nancy's or Good Culture brand
- 1 tsp nutritional yeast, Bragg brand
- 1/2 tsp each salt +pepper
- 1/2 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 c grated parmesan cheese
- 3-4 meatball per serving, AmyLu Foods or Chef Hak's brand
- optional fresh parsley or basil to top
directions
- Cook pasta as directed (most likely boil water, then add pasta, stirring for 5-10 minutes).
- While pasta cooks, drop all ingredients except pasta in a blender and blend until smooth.
- Spray a large saucepan with Chosen Foods avocado oil spray. Pour the blended mixture into saucepan and heat over medium. Add the meatballs to the mixture.
- Cook until heated through (about 5 min). Remember to stir entire time.
- Add cooked and drained pasta to the sauce and toss to soak up the sauce.
- Garnish with parsley or basil.
