1 - 2 organic delicata squash
spray organic coconut oil
Kosher or Celtic salt (i.e.: quality salt)
recipe
preheat oven to 450 degrees.
stab each of the squash with knife a few times, wrap with paper towel, microwave 2-3 minutes.
next, slice these about 1 inch thick. you'll notice that once you get the bottom / wider part of the squash, you'll find some strings and seeds! go ahead and cut those out.
position squash evenly on a baking sheet lined with parchment paper. spray with coconut oil. sprinkle with high quality salt.
roast in oven for 22-25 minutes.
