INGREDIENTS
In a large bowl, combine
- 1.75 cups oat flour
- 1/2 cup @lakanto sugar (can use monkfruit sweetener or coconut sugar)
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup+/- chocolate chips
In a Separate bowl, mix:
- 1 egg
- 2 tbsp greek yogurt
- 1 tbsp maple syrup (or honey!)
- 1 tbsp oil (avocado or olive works)
- 1/2 cup coconut milk (can be any ;) )
- 1/2 tbsp lemon juice
TO MAKE
Pour wet into dry, mix until combined. Scoop into lined muffin tin, top with extra chocolate chips. Most likely 8-10 muffins. Bake @ 425 for 8 mins, remove from oven and drop in a square of chocolate 🍫 reduce temp to 350 and bake for another 15-17 MINS.
