the ingredients
the wet
1 tbs flax meal
1/4 cup apple sauce
the dry
1 cup almond flour
1 tbs coconut sugar
1 scoop vanilla protein powder
1 tsp cinnamon
the extra love
1/2 cup diced apple
note: for extra rich flavor, frost these with my protein frosting, just add a little cinnamon to the mix!
the process
- preheat oven to 350. spray a baking tray with avocado oil (can also line a baking tray with parchment paper).
- prepare the flax egg by mixing 1 tbs flax meal with 3 tbs water. let gel in fridge for 5 mins.
- in a large bowl, combine the gelled flax egg with all "wet" and "dry" ingredients. mix well. fold in the thinly diced apple slices.
- using a spoon, drop 10-14 (depending on what size you want!!) balls of dough onto the prepared baking tray. press down lightly on top of each cookie to give the flat-top shape.
- bake for 8-10 minutes.
