for chicken
- 1 lb boneless, skinless chicken breast cut into 1 inch cubes
- salt and pepper to taste
- 1 tbsp olive oil divided
- 2 cups broccoli florets
- 1/2 yellow bell pepper cut into 1 inch pieces
- 1/2 red bell pepper cut into 1 inch pieces
- 1/2 cup baby carrots sliced
- 1/2 cup chicken bone broth
- 1 garlic clove, minced

- 1/4 cup peanut butter - natural / unsweetened (ingredients should ONLY be peanuts)
- 1 tablespoon honey
- 1 teaspoon apple cider vinegar OR organic rice vinegar
- 2 tablespoon organic soy sauce (use tamari or coconut aminos for gluten free)
- 1 tablespoon ginger - either a grated root OR organic paste
directions
- Cut the chicken into cubes.
- Add 1/2 tbsp of olive oil to a large skillet or wok. Turn on medium high heat. Add chicken cubes and cook for about 3-5 minutes (NOTE: they do not need to be entirely done, because you will add them back later!).
- While this is cooking, pepare the peanut sauce. LINK HERE
- Remove chicken from skillet.
- Add broccoli, bell pepper, carrots, and minced garlic clove into the skillet. Pour 1/2 cup chicken bone broth on top. Cover with lid and cook for about 2 minutes.
- Next, add the half cooked chicken cubes BACK into the skillet. Bring to a boil, stirring occasionally, and let boil for one minute.
- Serve over a bed of rice (1/2 cup) and lettuce.
- Drizzle 2 tbsp of the peanut sauce on top!
