Ingredients:
1/2 cup chopped walnuts
1/2 cup chopped cashews, crushed
1/2 cup almonds, slivers
1/2 cup pumpkin seeds
2 tbsp cup chia seeds
2 tbsp dried blueberries
1/3 cup flax meal
1/3 cup coconut oil (melted)
1/4 cup maple syrup (can sub honey)
2 tbsp cup coconut flakes
1 tbsp vanilla
2 tsp cinnamon
Pinch of sea salt
*almond or coconut flour to absorb excess moisture
Directions:
Preheat oven to 400 degrees
In a large bowl, combine all nuts, seeds and flax meal + cinnamon
Add melted coconut oil, maple syrup and vanilla and stir well
Add just enough almond or coconut flour to absorb excess liquid and blend
Pour mixture onto a baking sheet lined with parchment paper in an even layer; sprinkle coconut and salt on top
Bake for 24-28 minutes, or until lightly browned (**honestly i just kept periodically checking it and stirring it)
Remove, let cool! eat as-is, sprinkle on top of yogurt, or even topped with fruit!
