equipment you'll need
- 3 mason jars
- measuring cups
ingredients PER MASON JAR (so, if making three mason jars, triple this)
➕2 tbsp rice, uncooked
➕12oz chicken breast, cut up
➕1 tsp paprika
➕¼ tsp garlic powder
➕Sea salt to taste
➕1/8c black beans, canned & rinsed
➕1 tbsp Primal Kitchen barbecue sauce
➕1/4c chicken broth
➕1/2 tbsp green onion, white section
➕1/4c grape tomatoes, cut up
➕2 tbsp cheddar cheese, shredded
➕1 tsp green onion, green section (topping)
directions
- Preheat oven to 350F. Place 3 oven safe glass bowls on baking sheet.
- Cut 12oz chicken up into cubes.
- Place 2 tbsp rice in EACH mason jar. Top with about 4 oz of chicken PER jar.
- Next, toss the seasonings (paprika, garlic powder, sea salt) in EACH jar. Then top each 1/8 cup of black beans, 1 tbsp BBq sauce, and 1/4 cup of chicken broth EACH jar. Stir well.
- Chop up the green onioins - both the white part and the green part. Chop the tomatoes in half or quarters.
- Top each mason jar with 1/2 tsp white part of the green onion, and about 1/4 cup of grape tomatoes.
- Sprinkle about 2 tbsp cheddar cheese on top of EACH jar. I recommend covering each jar with foil for majority of the baking time (about 30 minutes, then remove the foil for the remaining 10-15 minutes to let the cheese sizzle!
- Bake 40-45mins or until cooked through.
- Top with the green part of the remaining green onions.
